A kitchen catch up: Josh Eggleton’s views

You’ve probably have seen the stupendous six course feast menu that Josh Eggleton (chef and owner of Michelin-starred Pony & Trap) and Rob Howell (Head Chef of Root in Bristol and winner of Bib Gourmand award) will be serving up on Saturday night.  Here we catch up with Josh and get his view on a few things…

What are your top 3 favourite ingredients at the moment and why?

Salt. Always Cornish sea salt – it has amazing minerality and it’s delicious. Seaweed – it adds amazing umami. And radishes. We’re pulling them out of the garden at the Pony at the moment and they are knockout. 

What is the tastiest thing you’ve eaten recently?

 I had some red lentil dhal for breakfast – we are making it for a guest chef dinner at Parlour in London. I just needed some goodness in my body, and it’s so nutritious. And so tasty.

What are you most looking forward to about Valley Fest?

The scenery on site at valley fest. I’ve been cooking in Chew Valley for years and the whole place is beautiful, but the view overlooking the lake from Valley Fest is outstanding.

Who are you most looking forward to seeing at Valley Fest?

I really like Razorlight, I’ve enjoyed watching them a few times before. Basement Jaxx will be great to see too.
