Fresh from being crowned Great British Menu Champion of Champions 2025, Amber Francis brings her acclaimed produce-led cooking to Valley Fest for two exclusive feast sittings celebrating the very best of the season.

Classically trained at The Ritz London and renowned for her innovative approach to food, Amber combines exceptional technique with a deep respect for farming, sustainability and outstanding ingredients. Her cooking is vibrant, generous and rooted in a simple philosophy: when the produce is exceptional, it should take centre stage.

This special menu showcases some of the finest ingredients from local growers, farmers and producers, transformed into dishes that celebrate the height of summer.

BBQ hogget loin and spiced braised hogget shoulder with Valley greens, crispy lamb-fat roasted potatoes and grilled Community Farm vegetables

Burnt honey crémeux with sweet wine-roasted stone fruits, buckwheat crumble and lemon verbena

About Amber Francis

Amber Francis is one of the UK’s most exciting culinary talents, combining classical training with a deep commitment to seasonality, sustainability and food education.

Raised in the countryside, where farming and nature shaped her early understanding of food, Amber developed a produce-first approach that continues to define her cooking today. After training at The Ritz London and working in some of the country’s leading kitchens, she forged a unique career that bridges professional cooking with social impact.

As Head Chef and Senior Food Educator at Christ’s College Finchley, Amber is helping transform school food, championing cooking from scratch and inspiring young people to build a lifelong connection with good food.

In 2025, her talent and dedication were recognised with an extraordinary series of accolades. Alongside being crowned Great British Menu Champion of Champions, she was named SquareMeal x Ayala Female Chef of the Year and received the Foodservice Cateys Extra Mile Award.

Amber’s cooking is thoughtful, produce-led and firmly rooted in the seasons, showcasing exceptional ingredients with creativity, precision and care.
