Hugo Harvey is the head chef at Bristol’s, Pony Bistro, which is the latest restaurant to be added to Josh Eggleton’s impressive portfolio. Since it opened in May 2021, it’s been raved about by local diners and was added to the Michelin guide within its first year of trading.
Hugo’s main focus is on fresh local produce and the team cooks over open fire, focusing on seafood from the South West coast; vegetables and herbs from their own Pony Garden and local growers, as well as quality reared meat — to create a seasonally changing menu.
